Gongura Pachadi is made from gongura leaves (sorrel/roselle), giving unique tangy flavor. This spicy chutney is Andhra's pride, served with rice, upma, or as side. Rich in iron & vitamin C!
Traditional recipe
3 cups chopped fresh gongura leaves
10 dried red chilies, 2 tbsp oil, 1 tsp methi, salt
6 garlic cloves, small tamarind ball
15-minute easy recipe
Heat oil, fry methi seeds till brown. Add gongura leaves, sauté 5-7 mins till wilted & water evaporates.
Cool sautéed leaves. Grind with red chilies, tamarind, garlic, salt to coarse paste. Don't make smooth!
Heat oil, fry crushed garlic till golden. Add ground chutney, mix 2 mins till oil separates.
Cool & store. Serve with hot rice & ghee!
