Thukpa is a popular noodle soup from Tibet, Nepal and Northeast India. Made with hand-pulled wheat noodles in flavorful chicken/veg broth with fresh vegetables, herbs and warming spices. Highly nutritious and soul-warming dish perfect for cold weather.

Ingredients (Serves 4)

200g wheat noodles, 1L chicken/veg broth, fresh cilantro

200g chicken/tofu, carrots, cabbage, capsicum, mushrooms, spring onions

Garlic, ginger, onion, tomatoes, cumin, coriander, chili, soy sauce, lime

Step-by-Step Recipe

30-minute comforting soup

Cook Noodles

Boil noodles till al dente (slightly firm). Drain and toss with little oil. Keep aside.

Prepare Broth Base

Sauté garlic, ginger, onions till golden. Add tomatoes, spices. Pour broth and simmer 10 mins.

Add Proteins & Veg

Add chicken/tofu and vegetables. Cook till tender but crisp (8-10 mins). Adjust seasoning.

Assemble & Serve

Divide noodles in bowls. Ladle hot soup over. Garnish with cilantro, lime, chilies. Serve steaming hot!
