Bori Baasi (rice water) is fermented starch water from cooked rice, popular Chhattisgarh rural drink. Naturally carbonated, tangy like lassi, rich probiotics. Tribals leave rice overnight, strain starchy water next day. Summer cooler, digestion aid, hangover cure - zero waste recipe!

1 bowl cooked rice (preferably parboiled/old)

Fermentation Ferment

Natural Culture

2 liters water + pinch salt + optional ginger

Serve Garnish

Lemon & Spice

Lemon juice + roasted cumin + mint leaves

Step-by-Step Recipe

Zero-waste overnight tribal method

Soak Rice

Take leftover cooked rice in earthen pot. Add 2 liters water, pinch salt. Stir well.

Ferment Overnight

Cover loosely with cloth. Keep warm place 8-12 hrs. Natural fermentation bubbles up.

Strain & Season

Strain cloudy rice water through sieve. Discard rice solids. Add lemon juice, roasted cumin.

Chill & Serve

Refrigerate 1 hr. Serve chilled in glasses garnished with mint. Fizzy & tangy!
