Gujarat's Winter Vegetable Medley

Undhiyu ("upside down") is Gujarati winter delicacy made with 15+ seasonal vegetables layered bottom-to-top in earthen matla pot. Includes Surti papdi, yam, baby brinjals, potatoes stuffed with masala, and muthia (gram flour dumplings). Slow-cooked overnight on low coal fire. Eaten with puri, shrikhand, banana. Festival favorite during Uttarayana!

Ingredients (Serves 6-8)

Surti Papdi Seasonal

Surti Papdi & Lilva

250g surti papdi + 1 cup lilva beans (tuver dana, valor, sem papdi)

Yam & Brinjals

250g yam (suran), 8 baby brinjals (stuffed), potatoes

Muthia Dumplings

Muthia & Masala

Gram flour for muthia, green masala paste (garlic, chili, coriander)

Traditional Recipe

Authentic Surti Undhiyu method

Green Masala

Grind coriander, garlic, green chilies, turmeric to thick paste for stuffing/curry base.

Muthia Dumplings

Mix gram flour, fenugreek, chili paste, oil. Steam/roll into fingers. Slice after cooking.

Layer Matla

Bottom: yam/potato/brinjal stuffed with masala. Middle: beans/seeds. Top: muthia. Oil/spices between layers.

Slow Cook Overnight

Seal matla pot, cook on low coals 6-8 hours. "Undhiyu" = inverted pot cooking. Serve upside down!
