Bajra Khichdi is a wholesome Haryana dish combining pearl millet (bajra) and yellow moong dal. This one-pot meal is slow-cooked with warming spices and ghee, perfect for cold winter nights in Haryana's fields. Highly nutritious with complete protein, fiber, and minerals - farmer's favorite for energy and warmth. No fermentation, easy digestion!
Simple rustic ingredients for authentic taste
¾ cup bajra rava + ¼ cup yellow moong dal (soak 2 hrs)
Ginger, green chili, turmeric, salt + carrot/peas optional
3 tbsp ghee + cumin seeds, hing, bay leaf for final tempering
Traditional pressure cooker method (45 mins total)
Wash soaked bajra rava + moong dal. Pressure cook with 3 cups water, turmeric, salt, ginger-chili paste for 4 whistles. Let pressure release naturally.
Heat 2 tbsp ghee, add cumin, hing, bay leaf, chopped veggies. Sauté 2 mins. Add to cooked khichdi, mix well. Simmer 5 mins adding hot water for porridge consistency.
Heat 1 tbsp ghee, crackle cumin seeds, red chili, hing. Pour hot tadka over khichdi. Mix gently. Garnish with coriander.
Serve steaming hot with jaggery, ghee or curd. Perfect winter meal! Pairs with Haryana bajra roti too.
