Besan Masala Roti is Haryana's popular stuffed paratha filled with roasted gram flour (besan) mixed with spices, onions & herbs. Found at every dhaba & highway stall, this crispy, flaky flatbread is Haryana truck driver's favorite. Quick to make, filling & flavorful - perfect travel companion with curd, pickle or tea!
Simple pantry staples for authentic dhabha taste
1 cup gram flour + onion, green chili, coriander, spices
2 cups atta + water + salt + 2 tbsp oil for soft dough
Ghee for roasting + red chili pwdr, garam masala, ajwain, salt
Dhabha-style preparation (45 mins total)
Roast besan till golden aroma (5 mins). Cool, mix chopped onion, green chili, coriander, red chili pwdr, ajwain, garam masala, salt. No water - dry mixture.
Mix atta, salt, oil, water to soft pliable dough. Rest 15 mins covered. Divide into 6 balls.
Roll dough ball thin, place 2 tbsp masala center, gather edges, re-roll gently to 7" disc. Don't let filling spill.
Hot tawa, 1 tsp ghee each side, press edges with spatula for crispy layers. Cook golden brown both sides. Stack with ghee paper.
