Haryana Kheer is rich, creamy rice pudding made by slow-simmering full fat milk with basmati rice, sugar and fragrant cardamom. Garnished with almonds, pistachios and saffron strands, this dessert is staple in Haryana homes during festivals, weddings and special occasions. The prolonged cooking develops the signature pinkish color and thick consistency loved across generations.
Rich traditional ingredients for authentic taste
2 liters full cream milk (key for richness & color)
¼ cup basmati rice (washed) + ¾-1 cup sugar
Almonds, pistachios, cardamom pwdr, saffron + rose water
Traditional slow-cook method (1.5 hours)
Boil 2L full fat milk in heavy bottom pan on medium flame. Stir occasionally till reduced to half volume (~45 mins). Milk develops creamy pinkish layer.
Wash & add ¼ cup basmati rice. Stir every 5 mins. Cook till rice 80% done & milk thick (30 mins). Lower flame completely.
Add sugar, cardamom pwdr, soaked saffron, rose water. Stir till sugar dissolves & kheer thickens (15 mins). Don't boil after sugar!
Turn off flame, add chopped nuts. Cool to room temp, refrigerate. Serve chilled garnished with slivered almonds & pistachios.
