Winter Steamed Bread Treasure

Siddu is signature Himachali breakfast steamed in special cylindrical bamboo/metal steamer over wood fire. Outer wheat flour dough encasing sweet khoya stuffing with poppy seeds (khaskhas), walnuts, raisins, jaggery, ghee. Perfect winter food keeps warm. Eaten with fresh butter/ghee. Mandi Shivratri festival special.

Ingredients (Makes 12 Siddus)

Traditional filling & dough proportions

Wheat Flour Dough

3 cups atta + 1 tsp yeast/soda + salt + warm water for soft pliable dough

Sweet Stuffing Filling

2 tbsp poppy seeds + ½ cup walnuts + raisins + ¼ cup jaggery + ghee

Step-by-Step Siddu Recipe

Traditional bamboo steamer method (3 hours)

Prepare Dough

Mix 3 cups atta + 1 tsp baking soda/yeast + pinch salt + warm water. Knead soft dough, rest 1hr covered. Traditional wood-fired yeast version overnight.

Make Stuffing

Roast poppy seeds + grind walnuts + mix jaggery + ghee + raisins. Stuffing ready. Must be dry for steaming.

Shape & Steam

Oil hands, take lemon-size dough, flatten, add 1 tsp stuffing, seal like momo. Steam 20-25 mins in siddu steamer/bamboo over boiling water.

Serve Hot

Dip piping hot siddus in melted ghee or fresh malai butter. Breakfast with chai. Perfect winter fuel!
