Thekua is Jharkhand's signature festival prasad, especially prepared for Chhath Puja. Made from wheat flour, jaggery and ghee, these deep-fried diamond-shaped sweets have crispy exterior and soft interior. Originating from Deoghar region, they symbolize devotion and are offered to Sun God. Long shelf life makes perfect for festival gifting!

Ingredients (Makes 25-30 Thekua)

Traditional ingredients for authentic Jharkhand taste

Wheat Flour Main

Wheat Flour (Aata)

2 cups whole wheat flour (atta)

Jaggery Sweetener

Jaggery (Gur)

1 cup grated jaggery (gur) or 3/4 cup sugar

Ghee Fat

Ghee & Spices

1/4 cup ghee + cardamom, fennel, salt

Step-by-Step Recipe

Traditional 45-minute recipe for authentic Jharkhand Thekua

Prepare Batter

Grind soaked green gram with ginger, green chilies, cumin, and salt to smooth batter. Batter should be pouring consistency like dosa batter. Let rest 30 mins.

Heat Tawa

Heat iron tawa on medium flame. Sprinkle water to check - should sizzle & evaporate. Wipe with onion cut side for non-stick.

Spread & Cook

Pour ladleful batter, spread thin circle. Sprinkle onions. Drizzle oil around edges. Cook till golden & crisp (3-4 mins). No flipping needed!

Serve Hot

Remove carefully with spatula. Serve immediately with ginger chutney. Crispy edges make it perfect!
